terra alma Secures Location for Ashland’s Kitchen
terra alma announces that Ashland’s Kitchen has secured a location on the ground floor of the One Overton Park office building in the Cumberland Mall area. Opening on September 3, the 95% made-from-scratch restaurant will delight office workers and area residents with fresh meals that source local, high-quality ingredients. With a motto of “We do food differently,” Ashland’s Kitchen offers a variety of gluten, vegan and dairy-free items.
Operating out of 2,000 square feet on the main floor of the office building, Ashland’s Kitchen will serve breakfast and lunch five days a week. Its focus is on healthy food that doesn’t feel like it is healthy.
Breakfast options include Shakshuka, eggs benedict, steel-cut oats, bagels, breakfast sandwiches, eggs and bacon and keto pancakes. Lunch options include fresh salads, veggie quiche, vegan nuggets, chicken strips, turkey or traditional meatloaf, mac and cheese, burgers, chicken sandwiches and more. Coffee, tea, desserts and a kids’ menu are also available.
Restaurant veteran Robyn Thompson owns and operates Ashland’s Kitchen with her son Jacob Higbee. Thompson will draw on knowledge earned while operating her ice cream franchise, 4 Fat Cows.
“We do food differently at Ashland’s Kitchen. I’m leaning into healthy in a decadent way, like the food I remember enjoying in the cool hippie Oregon town where I grew up,” states Thompson. “We spend extra money on real ingredients, not fillers. I hope what you eat with us feels good and healthy, not loaded with crap.”
In addition to breakfast and lunch, Ashland’s Kitchen will offer a grab-and-go area where patrons can grab fresh meals to take home for dinner or freeze for a later time. “With the hustle and bustle of life and traffic, Ashland’s Kitchen is working to make life a little easier and a bit healthier,” states Thompson.
Adjacent to Ashland’s Kitchen is a small convenience store that provides office workers with necessities. Thompson and her team have stocked it with the usual snacks, candies and chips while adding candles, gifts and kids’ toys to streamline gift-giving for those in a rush. “I think people will see that we had a little fun with the store area and appreciate it,” comments Thompson.
“Edie is truly phenomenal. The support she has given me has been nothing short of amazing. When I asked Edie if she knew of any vacant places for a new restaurant, she quickly responded with the perfect location. Our hope is to scale this to four or five locations with a prep kitchen that makes meal prep the centerpiece of our business, including catering deliveries,” said Thompson.
